Every time I visit my parents in Wisconsin I bring home a suitcase full of Summer Sausage, and I make them bring as many sausages as they can fit every time they come visit me. Unfortunately I'm down to my last sausage right now, and I'm months away from another visit. My little girls are going to be so sad without their sausage sandwiches for lunch, and we just can't get anything good out here in California. Ingredients

  • 1 package 100 Calorie Pepper Jack Chicken Bratwurst 10.7 oz.
  • 1 tbsp olive oil
  • 2 tbsps rice wine (or dry sherry)
  • 1 cup mango, cut in small chunks
  • 1 cup fresh pineapple, cut in small chunks
  • 1 cup salsa, any brand
  • 1 cup frozen edamame
  • 1 cup black beans, canned
  • 3 cups cooked rice
  • 2 tbsps fresh cilantro, chopped

Directions

Sauté sliced Chicken Sausage in olive oil over medium-high heat, add rice wine (or sherry) and cook for 2 minutes. Add mango and pineapple chunks and continue cooking for 2 minutes. Add salsa, edamame and black beans and warm through, about 2-3 minutes.

Toss the rice with the chopped cilantro and spoon onto plates. Top with sausage and salsa mix!
