Lemby Special

print this recipe Print recipe

The Lemby Special is an original concoction dreamed up in the mid1960's by two grade-schoolers (one with the last name Lemberger) who came home hungry after school one day. Looking through mom's kitchen the boys found the basic ingredients that make up the "Lemby" which is a warm open-faced summer sausage and cheese sandwich. Many years later it is still enjoyed by their families and many friends who have been introduced to it.

Ingredients
• Cher-Make Summer Sausage
• Sliced Bread
• Sliced Cheese (American or your cheese of your choice)
• Seasoning Salt (Big Boy preferred or Lawry's)
• Garlic Salt (McCormick California Style coarse grind blend with Parsley)

Directions
Toast one slice of your favorite bread and butter if desired. Cut two slices of Cher-Make summer sausage into 1/2 inch cubes and spread evenly as needed on top of the slice of toast. Place a slice of cheese on top of the summer sausage cubes. Sprinkle top of cheese with Big Boy seasoning salt and garlic salt to taste. Place in open oven under broiler just until cheese melts down over the summer sausage cubes (original 60's method before microwaves), or place in microwave oven and cook on high until cheese melts down over the summer sausage cubes (about 30 seconds). Enjoy this Manitowoc classic!
