Tropical Pepper Jack Chicken Salad
This quick salad is a refreshing medley of mango, pineapple, edamame and tangy Pepper Jack Chicken Bratwurst. Fresh, colorful and so good for you - this salad is sure to please!
Sauté our sliced 100 Calorie Pepper Jack Chicken Sausage in olive oil over medium-high heat, add rice wine (or sherry) and cook for 2 minutes. Add mango and pineapple chunks and continue cooking for 2 minutes. Add salsa, edamame and black beans and warm through, about 2-3 minutes.
Toss the rice with the chopped cilantro and spoon onto plates. Top with sausage and salsa mix!
