Orzo with Corn, Kale & Sausage

  • 1 package 100 Calorie Chicken Brat 12 oz.
  • 1 tbsp olive oil
  • 1 package orzo (450 gram)
  • 1 package kale, stems removed and chopped into bite-size pieces
  • 2 cups corn, cooked
  • 1 pint cherry tomatoes
  • 1 cup feta cheese, crumbled
  • 1 pinch salt and pepper to taste


Bring a large pot of salted water to a boil and add the orzo, cooking until al dente (about 5 minutes). Drain well and put back into the pot it was cooked in.

While the orzo is cooking, place the oil in a large skillet and add the chicken brats until lightly browned. Add kale and corn, cooking until kale is wilted. Add cherry tomatoes, cooking until warmed through (about 2-3 minutes).

Pour the brat mixture into the pot of orzo, add the feta cheese and ground pepper. Stir to combine. Add salt if desired.
