One-Pot Italian Sausage Soup

The combination of the 100 Calorie Italian Chicken Sausage and light broth provides lots of delicious flavors without being too heavy. Serve as a main meal or as a side to accompany your main dish.


  • 1 package 100 Calorie Italian Chicken Sausage 12 oz.
  • 1 clove of garlic, minced
  • 2 cans beef broth (14 oz.)
  • 1 can Italian-style stewed tomatoes (14.5 oz.)
  • 1 cup sliced carrots
  • 1 can great Northern beans, undrained (14.5 oz.)
  • 2 s small zucchinis, cubed
  • 2 cups spinach - packed, rinsed and torn
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt


Slice the Italian Chicken Sausage into bite size pieces and then brown in a stock pot. Once browned, add in garlic, broth, tomatoes and carrots and season with salt and pepper. Reduce heat, cover and simmer for 15 minutes. Stir in undrained beans and zucchini. Cover and simmer for another 15 minutes, or until zucchini is tender.

Remove from heat and add spinach. Replace lid, allowing heat from the soup to cook the spinach leaves. Soup is ready to serve after 5 minutes. Top with croutons and parmesan cheese if desired.
